Introduction
About 12 years ago I was struck by the celiac disease at the age of 25 in spite of the fact that this disease generally appears in infants when they start to have a variable diet, especially after the introduction of flours in their diet. Today, by following the proper diet and eating the proper food, I lead a normal life and my state of health is good. I live in Algeria, I am married and I have 2 children who are not struck by the disease. Gluten intolerance was accepted by me easily since I do not consider it as an illness. To look on the bright side of life, I would say that people who have this illness do not depend on any medicines or any medical treatment, except perhaps in the beginning, they don’t have to follow a too demanding diet like the one followed by people who suffer from high blood pressure, diabetes, or stomach ulcers. But for children, the danger is reel since the chronicle diarrhoea, which is the main symptom, will cause growth troubles in the long term. This diarrhoea can be avoided by sticking stringently to a gluten free diet which is the only treatment for the illness. What must be noted is that there is always a chance of a total recovery from this illness as long as a strict diet is followed, but if not, the person could get a more serous illness. The diet can appear to be difficult because of the lack of information, due to the little number of ill people and their relatively unknown illness. I myself had to do some personal research concerning the diet to follow by getting in touch with others sick people or with the parents of sick children or by responding to the appeal of desperate parents who didn't know how to feed their sick child. For this reason, I wanted to pass on my knowledge and my gluten-free diet experience to help others by telling them that this diet is not as frightening as one can believe. It is different because the basic element is Corn. It remains that children would want to eat other things but if one could explain to them properly the reason for the diet, and if they can eat as much as they like, as their brothers, sisters and friends do, they will not feel the deprivation. I hope that my work will pave the way to those who want to go further in the research of this disease and its treatment because my objective is not to give a gastronomic or medical reference, but to help. Furthermore, the recipes that I am giving are already known, I didn’t invent anything new but I readjusted the recipes to Corn. My objective is to give some ideas and some tricks. Each person will be able, then, to improve or innovate according to his or her taste, or to the taste to his or her child. I also hope that this work will help sick people to accept their state of health because it will lessen the diet’s constraints by allowing them to taste perhaps for the first time, something which they though was not allowed. I must thank all those who helped me to make this work available on the net, so it would reach each and every sick person.
